With Christmas when my mom was here I had asked her to make some carrotsoup like she used to make  as long as I remember. I just love that soup and we had bought our selfs a new refridgerator with a freezer with 3 drawers so I wanted to  put some in the freezer too.  And ofcourse my mom made a load of soup and it was delicious as always. We froze in a few liter soup that she had made extra. But all that soup.. well… its all gone.. we ate it all in January and February allrdy and  a few weeks ago it started itching again.. I wanted to have carrotsoup.. Now our normal grocerystore where we always go was doing a redecorating that would last till half april so I was going to wait till then… And this week it was reopened.
So I bought  all the Ingredients I needed and today I made that famous carrotsoup myself.. for the first time.. And it was delicious, just like my mom makes it. Good job eh? Thank goodness I made a lot of extra so next time when I want  some carrotsoup again, all I need to do is open my fridge n get myself a pack of frozen carrotsoup out. Since that soup turned out so well when I tried to make it by myself, I wanted to share the recipe here. So you guys can try it for yourself :). I am using European/Dutch measurements so you might want to google up to converse to your own country.
Carrotsoup  (+/- 8 portions)
- 500 gram Wintercarrots (those are like the biggest carrots u can find XD) fresh ofcourse.
- 1 onion
- 2 toes of garlic (I used garlic paste thats rdy to use)
- 4 beef bouillon blocks (make sure its for 2 liter bouillon)
- 40 grams margarine (butter)
- 40 grams flour (all purpose)
- 2 liter water
- 3/4 teaspoon curry powder
- 150 gram grounded beef)
- 1 thin leek
- parsley hacked in small pieces for finishing touch.
- salt and pepper
Clean the carrots and cut them in  big slices. Peel the onion and cut it in tiny pieces. peel the garlic and  use a garlic press to make 2  toes into paste.
Use a BIG soup pan thats large enough for  all ingredients to fit when the soup is finished.  Put in the pan: 2 liter water, the carrot slices, the cut onion, the pressed garlic and the bouillon blocks. Bring it to boiling and let it boil for 15 minutes.
Take a large bowl (or 2) and a sieve and pour the soup  thru the sieve into the bowl(s) so u have a clear bouillon left over. The carrot and onion and garlic that u catched in the sieve you going to have to mash completely (I used my kitchen machine with blades for this) U can put all the bouillon back together in the big pan and keep the mashed carrotmix seperated for now.
In another pan you melt the butter and stir the flour through it when its melted. Then little by little you add some bouillon as you keep stirring till you have a lightly bound soup.  Add this lightly bound soup back with the rest of the bouillon int the large pan and add the mashed carrotmix aswell. Now its time to test the taste of your soup first time. add a lil bit of the currypowder and try again.. then add  a little more if neccesary and some salt and pepper just the way you like it.
From the ground beef you gonna have to make tiny lil balls. Bring your soup back to boiling and add the lil meatballs. let that boil for about 10 minutes. In  that time  you can cut the leek into  small/thin slices (rings) and let those boil aswell for 5 minutes in the soup. (If you want to freeze in the soup then seperate what you going to use right away and add the leek to that so the part you going to freeze dont have the leek. You will have to add that when you going to use the soup.) Last but not least, when serving the soup sprinkle a little bit of the  hacked parsley after pouring the soup into bowls/plates.
Make sure the soup has cooled down before you freeze it. enjoy 🙂

But what a difference from last year!!! Yes, we are tight with money since Antonio still doesnt have a job yet and my income is still the same. But this year we are not sitting in a cold n tiny lil house with mice and noisy neighbours. I still enjoy and appreciate the new appartement we have since I know so well how it used to be. Another different thing from last year is that I am ofcourse not pregnant anymore, and with that.. not sick. last year the whole christmas and newyears party I had planned just couldnt take place. I could not stand any food and the little bit I could eat I would throw up right away. So Yeah in many ways this Christmas is totally different.
My Christmastree has been up since beginning of december and little by little we decorated the house. Since there wasnt much money to do anything extra, we made a lot of our own Christmas decorations. I found the ideas and the tutorials for some of those on google. I will post those links maybe some other time because I am lazy lately. I do not know why but I have become extremely lazy with such things. I prefer spending that time doing something else. Thats why I have not posted much lately and why I am not up to date with the pictures either. So before I make any promises I will just keep it at a “maybe”.
Since we now have a decent house and the posibility to offer my mom a place to sleep when she comes, we invited her to come over this Christmas. I am really looking forward to it although I can imagine shes a little bit looking up against it. Its going to be her first Christmas without my stepfather since I was ehhhh 5 years old. And them both having the same birthday on december 23 and there wedding day on december 27 makes it ptretty heavy on her I am affraid. I hope however that staying over at my house, which is something completely different from all the other years, and Anarosa, her youngest grandchild will give her enough things to appreciate so it wont be all bad those days for her. I am looking forward too to have her arround, my oldest daughter loves playing games and the more ppl the merrier.
I just hope that she will be able to come because the weather this year is completely different from last year as well.. its cold outside, but not only that its white… very white.. a lot of snow came our way this year and although I love the winters weather I also would like my mom to be able to drive here safely. And theres still suposed to come more snow n freezing… We are all looking forward to it So lets just hope for the best!!!
Wishing you all a merry Christmas and all the best for 2011!! take care!!

Its autumn allready, time goes so fast and I only have so little of it XD. So here some updates about what happened in my life recently.
– Anarosa, ofcourse been growing and growing and producing lots of diapers too ofcourse LOL but yeah shes not a newborn anymore. I stopped breastfeeding here when she was 3 months and when shes 4 months we will start introduce real food to her besides milk. In my gallery you can find now a section with pics from her by the way :). I will ofcourse update and add pictures there whenever I feel like it.
-The house, yeah the house, we still had a lot of thingsthat needed be done since the last time I posted about it and even when we now did a lot again, still a lot needs to be done. Anarosa her room is mostly done now. The plints need to be added and we still want to buy a new commode for her room and ofcourse the curtains to finish it off. a few planks on the wall to put some decorations and thats done. The living room just needs curtains mainly and my crossstitch painting on the wall. also we dont have the money yet and havent found yet real nice vitrines that we can hang on the wall like the ones we have seen at ikea before they took it out of the collection. The table in the kitchen is there now too and we need to add only 3 more chairs there and ofcourse some curtains in the window too. we have replaced the refrigerator for a bigger one with a freezer so we can finally keep our leftovers a bit longer and are not forced to eat them the next day :).
Well I guess thats as much as all the updates now, more news whenever !
